What to expect from stainless-steel cookware

Look beyond the finish to construction, handling and the way you cook.

A different surface to cook on

Uncoated stainless steel should not be approached as if it were a non-stick pan. Food release depends on the food, the cooking method and temperature management. If your main requirement is sliding a delicate egg out with very little attention, decide whether you want to learn a different routine before replacing every pan in the cupboard.

Stainless cookware is often considered for browning and sauces, but the material name alone does not describe how a particular pan behaves. Read how its base and walls are constructed. A bonded base and a fully clad body are different designs; their practical value depends partly on the dish and the size of the pan.

Pick it up before comparing the set

A set price can hide pieces you will rarely use. List the sizes you reach for now, then compare individual pans with the set contents. Two useful pieces can be easier to store and handle than a large collection with several overlapping sizes. Include lid storage in that calculation, especially in a narrow drawer.

Check the rim for pouring and the handle for clearance. A helper handle on a large pan may make serving more manageable, but it also occupies cupboard space. Consider the full footprint, not only the diameter. On a small hob, long handles can make an otherwise suitable combination difficult to arrange.

Allow for cleaning and heat limits

Follow the manufacturer's instructions for preheating, utensils and cleaning products. A finish that develops marks does not automatically mean the pan has failed, but you should identify the mark rather than apply an abrasive cleaner at random. Let the cookware cool as instructed before washing and check how the handles and lid should be treated.

The lid can determine the oven limit even when the metal body tolerates more heat. Removable handles add another set of instructions. Write down the limits for the complete configuration you intend to use, including any lid knob. When comparing two pans, construction, manageable weight and a useful shape are more informative than choosing whichever has the most impressive stainless-steel description.
